It is beautiful out today. I have the windows open all through the house. There is a slight breeze outside that keeps blowing the curtains away from the window. Ah, Fresh air!

I am cooking chicken legs for dinner with a bit of salt and pepper to crisp up the skin. I haven't decided what to make with it... either mashed potatoes or rice. Probably potatoes because we had rice the other night. I plan to also make a delicious salad with tomatoes, onions and cucumbers! That's all I need to add because I cheat and get the Pre-mixed bags of salad. :)

We got a beautiful new rug last weekend. It was a house warming present from my Mom. It is oval with black brown and white colors. It is very detailed all around but hard to describe. I'll post a picture sometime. It fits perfectly in our living room and matches the house great!

Well, I suppose I should get started on peelin' those potatoes! Jon gets home in half an hour.

It turned out to be a beautiful Sunday afternoon. A great day for a bike ride in Fairmount Park. After church we got ready to head over to the nice long path that runs along the Wissahickon creek. A lot of other people had the wonderful idea of heading out for a bit of exercise this afternoon as well. After driving around a bit we finally found a parking spot. It was the kind of afternoon that you just want to go on forever! It wasn't hot or cold out. It was just right. The sun was shining, the creek was flowing, people were fishing, walking, biking, running... Families, couples, friends. All kinds of people! We ended up riding 5.6 miles overall! It was just fantastic.

I'm thankful for today.

Thoughts of an insane blogger, post dedicated to Matt.

First, let me explain the title. I am not insane. My brother so kindly, hah! suggested that it would make a great title for my blog. Oh how nice of him to tell me that my blog sounds like it's written by an insane person. I really did get a kick out it and I told him that I would use it as the title of my next post.

I had posted a status on facebook a while ago asking for ideas on names for my blog because "Beth" is just boring. Of course my brother comments...He left three names that he thought would be perfect titles! They all have stories behind them too. They are basically stories of my life. Either things that I have always been teased about or will be teased about forever more. The titles he came up with were, "Honey, I cooked the extension cords", "My struggles with gravity" and "sugar or salt, are they interchangeable?"

Yes, one time I cooked a cord.
I was using my George forman grill in the small apartment kitchen. It made it smoky so I plugged in our little fan which had to go into the same outlet. The cord ran from the outlet, behind the grill and along the side of it until it came to the little t.v. tray that I had placed in the doorway of the kitchen, for the fan to sit on. As I was cooking I kept opening and closing the grill to check on the meat. When the meat was about ready I thought it smelled funny. SUDDENLY a spark came from the outlet, the fan turned off. "Hmmm..." I thought to myself. The cord was melted pretty good in one spot. It had gotten stuck in the back corner of the grill from me opening and closing it.

Gravity.
My family has always teased me about gravity. I seem to have a habit of dropping things. They had a lot of fun with that.

Is it sugar or salt????
This was my first attempt in making cheesecake. I had all the ingredients and mixed them up. Right before I put it in the spring form pan to go in the oven, I tasted it. Oh, it tasted horrible! Was cheesecake supposed to taste like this? I cooked it anyway thinking that maybe that would fix the taste. When I took it out of the oven it just didn't look like it set right. I let it cool over night. I went into work the next day and told my mom about it. I told her it tasted horrible. I just couldn't figure out what I had done wrong. She asked me if I used salt instead of sugar. Of course I was like No! I'm sure I used sugar! It was odd though because I thought back to tasting the mixture before it was cooked and it did taste a little salty. I had in fact used salt.
